Squid Ink Pasta with Shrimp, Calamari, and Delica Caviar

Ingredients

-250g squid ink pasta
-200g shrimp, peeled and deveined
-150g calamari rings
-3 tablespoons olive oil
-2 cloves garlic, finely chopped
-1/2 cup dry white wine
-1 tablespoon unsalted butter
-Salt and black pepper to taste
-Fresh basil leaves for garnish
-3 tablespoons Delica Caviar

Instructions

Cook the Pasta:

Bring a large pot of salted water to a boil. Cook the squid ink pasta according to the package instructions until al dente. Reserve 1/4 cup of the pasta water, then drain and set aside.

Prepare the Seafood:

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp and calamari rings, season with salt and black pepper, and cook for 2-3 minutes on each side until just cooked through. Remove the seafood from the skillet and set aside.

Make the Sauce:

In the same skillet, heat 1 tablespoon of olive oil and add the garlic. Sauté for 1 minute until fragrant. Deglaze the skillet with white wine, scraping up any browned bits, and let it reduce by half. Stir in the butter and the reserved pasta water, creating a silky sauce.

Combine:

Add the cooked pasta to the skillet and toss to coat in the sauce. Return the shrimp and calamari to the skillet and gently mix to combine. Heat for 1-2 minutes until everything is warmed through.

Plate and Garnish:

Arrange the pasta on a plate. Top with the shrimp and calamari. Add a generous amount of Delica Caviar on top for a luxurious finish. Garnish with fresh basil leaves for a pop of color.

Serve:

Serve immediately as a refined main course. Pair with a crisp white wine for an elevated dining experience.
