As a rainbow trout nears its prime maturity, our technicians use ultrasound technology to pinpoint the perfect time for roe extraction. Upon harvesting, we meticulously clean each egg to guarantee that these valuable pearls remain unscathed.
CAREFULLY SALTED
Delica Caviar undergoes the ‘Malossol’ process, renowned for being the healthiest approach, involving light salting. We employ only the most delicate salt to preserve and elevate its taste, avoiding any shelf-life extenders, preservatives, or chemical additives.

AGED TO PERFECTION
Delica Caviar is aged for three weeks at a controlled temperature range of 26-35º F (-3 to 2º C), allowing it to develop its deep, full-bodied flavor before reaching our customers. Our methods comply with both food safety laws and the CITES international wildlife conservation protocols.
